Zucchini Mini Pizzas 

The gardens are full of zucchini and everyone is wondering what to do with them. A fun and flavorful way to serve zucchini is making mini pizzas. They can be served as a snack, a side dish or an appetizer. 

Nutritionally sound, the zucchini is high in fiber, Vitamin B6, C, K, A, niacin, potassium, magnesium, folate, and phosphorus. Zucchini has anti-inflammatory properties and contains antioxidants. Because of zucchini’s high potassium levels it is great for your heart, and helps regulate healthy blood pressure and combats the effects of too much sodium in the diet.

Zucchini Mini Pizzas

1 zucchini

Olive oil 

Sea salt 

Organic tomato paste or sauce 

Vegan Shredded Mozzarella cheese 

Oregano 

Cut the Zucchini in diagonal slices about ¼ inch thick. 

Place flat on a cookie sheet. Drizzle a little olive oil over the slices and sprinkle a little sea salt on top. 

Spread a small amount of the tomato sauce over the slices (if you put too much sauce on the slices it becomes too wet). 

Sprinkle a little of the shredded cheese over the top and top with a sprinkle of oregano. 

Bake at 350 degrees for 10 minutes. Or you can also broil them for 5 minutes.
