Walnut Pie Crust:
1/4 cup water
1/4 cup olive oil
pinch sea salt
1 1/2 cups spelt flour
Mix water, olive oil and sea salt together. Add flour and mix until you get a dough that will hold together. From into a flat, round, wrap in plastic wrap and refrigerate. Once cold, roll out in between two pieces of plastic wrap. Put in an oiled pie shell.
Caramelized Top:
1 cup brown rice syrup
1/2 cup Amazake
pinch sea salt
pinch allspice
1 cup walnuts
Put all ingredients in a sauce pan. Bring to a boil on stove. Turn heat to medium and simmer for 10 minutes.
Creamy Middle:
3/4 cup Amazake
1/2 cup brown rice syrup
pinch sea salt
2 cups walnuts
3 T. arrowroot
Put all ingredients into a food processor. Puree until smooth. Pour into pie crust. Slowly, pour caramelized toping over the top. Bake at 350 degrees for one hour. Let cool completely before cutting.
