Commonly seen on menus as Welsh Rarebit
Welsh Rarebit (Serves 4)
1 lb. American cheese
1 tsp Worchester Sauce
1 tsp Mustard
1 cup Beer
4 slices Toast
Dice cheese. Put all ingredients in a deep pan. Melt slowly over low heat. Please toast on dish and pour the rarebit over the toast. Serve very hot. May be served over tomato slices and is perfect for fondue
Long Island Rarebit
Follow the above recipe adding 4 slightly beaten eggs yolks to the cooked mixture.
Yorkshire Buck Rarebit
Follow basic rarebit recipe, but place a poached egg on each slice of toast and top with rarebit. Sprinkle crumbled bacon over the top.
I have heard very interesting thoughts about what “rarebit” is, including “Peter Cottontail” concerns. The truth is found in the recipe. It is basically a heavenly, cheesy blessing of the Gods.
Rarebit when poured over toast, tomatoes or blanched broccoli will delight you each and every time. It is different and surprising and loves to include unexpected ingredients such as; bacon, chives, sliced & diced kielbasa or knockwurst. Let your imagination soar. Ask yourself what you enjoy with cheese and rest assured it will work well in or with Rarebit.
One final delicious and refreshing thought is Welsh Rarebit over toast, served with red seedless grapes, fresh sliced French bread for dipping and a chilled, crisp, fruity glass of chardonnay. I have to ask myself if life could possibly get better, when suddenly thoughts of dessert arrive in my mind; Carrot cake, prepared with raisins, walnuts and cream cheese frosting. YES…LIFE IS GOOD!
